Finocchiona takes its name from the Italian word Finocchio, or “Fennel.” Italian legend claims that Finocchiona came about when a hungry thief stole a salami from a local market and hid it in a field of wild fennel. When he returned for his “ill-gotten booty” it had taken on the flavor and aroma of the wild fennel.Pairings
